The East End of Long Island is a hotbed of agricultural activity, the home of over 70 wineries, and over 10,000 acres of potatoes, rye, corn, wheat, and malted barley farms. Prior to WWII, Long Island had over 200,000 acres of farms to help feed NYC. This is due to the loamy soils and unique climate, adding 15-20 extra days to the growing season.
When our farmers harvest the corn, vegetables and potatoes in the fall, they typically plant winter rye, which is known as “cleansing” grain due to its deep roots; meaning rye from Long Island is different than rye from anywhere else. Long Island is a leader in the preservation of open spaces. Field & Sound Bottled in Bond Bourbon is distilled with a Mash Bill of 60% corn, 33% Winter Rye & 7% Malted Barley.
Long Island Spirits uses a Sweet Fermentation process for production of all its Whiskies. This is a Mash made without the use of backset/sour mash as a starter for fermentation for better consistency and control..
Each batch is distilled 2 times over through the twin 650-liter custom-made copper pot stills. We take pride in the deep cuts we make preserving the sweetest part of the distillation, which is the hearts. Over 40% of the distillate which makes up the heads and tails never make it into the barrel.
Our barrel house is located by the bluffs of the Long Island Sound, this Maritime climate along with the hot, humid summers and cold winters provide Field and Sound with it's unique Maritime Whiskey taste profile.
