Long Island Spirits is a family owned independent grain-to-glass Distillery founded in 2007, as the 100th Distillery in the country. Bottled in bond is a label for an American-made distilled beverage, usually whiskey, that has been aged and bottled according to a set of legal regulations contained in the US government’s Standards of Identity for Distilled Spirits. It was put in place in 1897 as a government-backed guarantee of a product’s quality and authenticity at a time when adulteration of spirits was relatively common. To be labeled as bottled in bond or bonded:
The spirit must be the product of one distillation season by one distiller at one distillery.
It must have been aged in a federally bonded warehouse under US government supervision for at least four years and bottled at 100 (US) proof (50% alcohol by volume). The bottled product’s label must identify the distillery where it was distilled and, if different, where it was bottled. Only spirits produced in the USA may be designated as bonded.

Field & Sound Straight Bourbon Whiskey Finished in Rum Casks is the inaugural release of our new Rech6erche Collection. It begins with the distillation of Straight Bourbon by Long Island Spirits, using local grains from the North Fork of Long Island, New York. This Straight Bourbon then undergoes a graceful finishing process in 8-year old Rum Casks. The Rum itself is traditionally pot distilled by Long Island Spirits from black strap molasses and pure cane sugar. The whiskey’s extended aging in these rare rum casks, coupled with the maritime climate of Long Island Sound bluffs, further enhances the unique complexity of this extraordinary spirit.

This craft bourbon is distilled on Long Island, utilizing a high-rye mash bill (and locally grown grains) and the “sweet mash” fermentation tech-nique. The bottle’s label makes prominent references to maritime influ-ence, and there is a subtle salinity to this whiskey’s nose and finish. More noticeable is the enjoyable winter rye spice, and luscious vanilla and caramel notes.

Field & Sound has a sweet citrusy flavor with almonds, figs, and nut-meg notes. The finish is long, smooth, and spicy with a touch of choco-late and cinnamon bun. This bottle gives an Irish whiskey impression since it has high winter rye content. However, it offers a deeper char-acter. We love how it tastes neat, and we also appreciate the surprises it gives when water or ice is added.

Field & Sound Bot- tled in Bond Bourbon’s first batch release is limited to 6,000 bottles. Unlike most bourbons, it’s sweet mash fermented, a process that uses only fresh yeast.
